Menu for the week--

This week I have tried a few new recipes and so far, so good!  The girls and I went to Isom's last weekend for some fresh produce so I wanted to try some recipes to use some of those things in them!  I was also still stocked up on my Organic beef and chicken, rice, and canned tomatoes from my Costco run a few weeks ago.  So I put those ingredients in the search engine on MyRecipes.com (which by the way is really cool... you can search recipes by what you have on hand in your pantry).  I altered each recipe a little to make it fit what I wanted and they were all still great!  If you want the exact recipe with better instructions and ingredients list you will just have to search for them!

Monday:  Spanish Chicken and Rice
 - 1 lb chicken breasts, diced
- 1 small onion chopped
- 1 small garlic clove chopped
- 1 green pepper chopped
- 1 can diced tomatoes
- 1 cup chicken stock
- 1 cup rice
- 1 tbs olive oil
I browned the chicken in the olive oil for a few minutes in my pressure cooker uncovered.  Then I removed the chicken and added in the pepper, onion, and garlic.  After letting it simmer for a minute, I added in the rest of the ingredients and stirred in the chicken.  Set the cooker for 12 minutes and covered and turned it on.  I had a completed meal in about 20 minutes and it was delicious!

Tuesday: Chili Pie
- 1 lb ground beef
- 1 can diced tomatoes
- 1/2 onion chopped
- Tablespoon of chopped garlic
-  1 Tbs Chili Powder
- 1/2 teaspoon of cayenne pepper 
- Jiffy Cornbread Mix
- 1/4 cup Milk
- 1 egg 
I browned the beef on the stove top and then added in the other ingredients and let simmer for a few minutes while I mixed up the cornbread mix according to the instructions on the box (except I forgot my egg so I used a little oil and baking powder instead).  I poured the meat mixture in a baking dish and then topped with the cornbread mix and put in the oven for about 20 minutes at 400 degrees.  Jarrod added cheese to his but the girls and I both loved it without!  The recipe called for kidney beans added to the meat mixture but that just didn't sound good to me plus I didn't have any in the pantry so I just skipped that.  Yes I know this recipe wasn't completely clean but it still wasn't too bad.

Wednesday: Slow Cooker Apple, Butternut Squash, and Chicken
- 1 large butternut squash
- 3 apples (sliced and peeled -- I was lazy and didn't peel mine)
- 1-2 lb Chicken breasts or thighs 
- 2 tbs butter
- 1 tbs olive oil
- some dried rosemary (I just dumped a little of it in there... I hardly ever measure anything)
Wednesday is dance day so I almost always fix supper in my crockpot on those days.  So I peeled and chopped the squash and apples up and dumped them in the pot with the other ingredients and mixed it up.  I put it on low for 6 hours.  My slow cooker (which is just one of the many features of my pressure cooker -- I am telling you I seriously use this almost every night)  automatically switches to keep warm after the timer stops so we got to come home to a nice warm ready-to-eat meal.

We have a busy Thursday and Friday night so will probably just eat sandwiches for dinner those nights.  I would post that recipe too but it is pretty complicated but I will give you a hint (bread, turkey, and cheese or bread, PB, and banana).  Oh yeah and for breakfast this week, we had yogurt with berries.  Next week we will switch that up to eggs and toast!  Lunch was mostly leftovers and snacks were apples and peanut butter!
